Is there a way to display tangent edges in a shaded view? I just now realized the little edge display tool bar only effected the wire frame view of a model.

Turn on "With edges" in the Shade tab under View - Display Settings - Model Display...

wow. That's pretty cool. Now for my next dumb question, can you change the color of the edges?

Yes but it is a lot of work. The edges get the part color so then you have to assign different color(s) to the surfaces.
