The english definition of a QUILT is a blanket made to look like a patch work. It is predominanly used in cold countries (Northern India as well).
MS word gives the meaning as "a bed cover made of two layers of fabric stitched together, with interior padding of cotton or feathers held in place by decorative intersecting seams"
The decorative seams give it a feeling of being comprised of multiple patch work or surfaces. A free form surface can comprise of two or more stitched surfaces. Perhaps that is the reason for the term.
